Focus on Burgers - All Kinds!

Portobello Mushroom Burgers with Roasted Pepper Paste and Smoked Mozzarella

Lamb Burgers with a compound butter or pear, ginger, and caramelized onion Chutney

Compound Butter

  • 1 stick of softened salted butter
  • 1T finely chopped rosemary
  • 1T finely chopped mint
  • 1T (about 2 cloves) finely chopped garlic

If the butter is soft enough, mix all ingredients by hand or mix in a food processor.  wrap in plastic wrap and roll into a 1" diameter cylinder.  Refrigerate.

Pear Ginger, and Caramelized Onion Chutney

I follow this recipe from Emeril LaGasse, but I add 2 large, thinly sliced onions to the mixture as it cooks to make this a savory jam.  Goes great with lamb!
