Orzo and Spinach Side Dish - Easy, fast and sure to please

This is a great side dish that everyone will love.  There are a few basic steps and lots of variations depending on what your main course.  Everyone who has had this orzo dish that I have made loves it.  Always have a couple of boxes of Orzo on hand for a quick side dish.

  • 1 lb (a box) of orzo pasta (I prefer Barilla - I have found that other brands can become mushy)
  • Several handfuls of fresh baby spinach or arugula - note that you do not need to cook this.
  • 1/4 cup of Olive Oil
  • 2 finely chopped garlic cloves
  • 1/4 cup of currants/raisins
  • 1/4 cup grated parmesan/chevre/crumbled blue cheese/feta
  • 1/4 cup toasted pinenuts/walnuts
  • Salt and Pepper to taste

Cook the paste to al dente.  While the pasta is cooking prepare the other ingredients and toss together.  Drain the pasta and add to the other ingredients and serve immediately.

A Great Salad

  • Mesclun Greens
  • Fresh Fruit (Pear, Apple, Orange)
  • Toasted Nuts (Pine, Walnuts, Pecans)
  • Dried Fruit (Raisins, cranberries)
  • Cheese (Chevre, crumbled blue cheese, feta)

Toss all with a freshly made Vinaigrette.
